Project365-Day18…I hate being sick

Here’s my pic for the day. It’s a pic of all the things I’m using to get rid of this cold. I’ve had a sore throat for a week now. Then on Tuesday or Wednesday I lost my voice (or at least it sounded really bad). This morning I woke up with a runny nose, itchy throat, coughing, sneezing, etc. So yeah…not the best weekend in the world. Oh well…thank goodness for the above products. They give me a little relief.

Sugar Donut Muffins!

I was craving a donut this morning so I went online and found thisfabulous recipe from bakingbites.com. I love her recipes because they’re fairly easy and good! This tasted more like a muffin then donut, but it still hit the spot! I hope you get a chance to try it. Enjoy!

Sugar Donut Muffins

3/4 cup sugar

1 large egg

1 1/2 cups all purpose flour

2 tsp baking power

1/4 tsp salt

1/4 tsp ground nutmeg (I used cinnamon because I couldn’t find my nutmeg)

1/4 cup vegetable oil

3/4 cup milk (low fat is fine)

1 tsp vanilla extract

2 tbsp butter, melted

1/2 cup sugar, for rolling

Preheat oven to 350 degrees F. Lightly grease a muffin tin (I used a mini muffin tin) with cooking spray. In a large bowl, beat together sugar and egg until light in color.
In a small bowl, whisk together flour, baking powder, salt and nutmeg. Pour into egg mixture and stir to combine. Pour in vegetable oil, milk and vanilla extract.
Divide batter evenly into 10 muffin cups, filling each about 3/4 full. Bake for 15-18 minutes, until a tester inserted into the center comes out clean.

While muffins are baking, melt butter and pour remaining sugar into a small bowl.
When muffins are done, lightly brush the top of each with some melted butter, remove from the pan and roll in sugar (I just dipped the top in sugar). Cool on a wire rack.

On the hunt for Caramel Popcorn!

Growing up my Mom made the best caramel poporn. It was so sweet and buttery. It had the best texture. Unfortunately, I never paid attention to how she made it. Since I can’t ask her for the recipe I have decided to try and replicate it. I made some tonight that wasn’t right. This was realy good, but not what I was looking for. I’ll post the recipe for those who would like to try it. I’ll be sure to post when I find the right recipe. Enjoy!

 

Caramel Popcorn

About 10 cups of popcorn (more or less depending on how you like it…I like less)

1 cup butter

2 cups brown sugar

1/2 cup corn syrup

1 tsp salt

1/2 tsp baking soda

1 tsp vanilla

Preheat oven to 250 degrees. In medium sauce pan melt butter on medium heat. Add brown sugar, corn syrup and salt. Stir constantly until mixture comes to a boil. Once it comes to a boil let it sit without stiring for 4 minutes. Remove from heat and add baking soda and vanilla. Pour over popcorn. Mix well. Spread covered popcorn onto a large baking sheet (you may need to split it between two). Bake for 1 hour stiring every 15 minutes. Let cool completely. Eat!

Project365-Day17…Ice Skating!!

Here’s my pic of the day. Isn’t it fun! Me and a bunch of my co-workers met up at the ice skating rink today (since our school season is out so we had no work). It was so much fun! I only fell twice. lol. When I first got on the ice I honestly didn’t know if I would be able to skate at all because I was so unstable. I slowly worked up some courage and started to be the superstar skater that I am! lol…yeah right! heehee. Anyhow, thanks for a fun time ladies…and ben! lol.
