On the hunt for Caramel Popcorn!

Growing up my Mom made the best caramel poporn. It was so sweet and buttery. It had the best texture. Unfortunately, I never paid attention to how she made it. Since I can’t ask her for the recipe I have decided to try and replicate it. I made some tonight that wasn’t right. This was realy good, but not what I was looking for. I’ll post the recipe for those who would like to try it. I’ll be sure to post when I find the right recipe. Enjoy!

 

Caramel Popcorn

About 10 cups of popcorn (more or less depending on how you like it…I like less)

1 cup butter

2 cups brown sugar

1/2 cup corn syrup

1 tsp salt

1/2 tsp baking soda

1 tsp vanilla

Preheat oven to 250 degrees. In medium sauce pan melt butter on medium heat. Add brown sugar, corn syrup and salt. Stir constantly until mixture comes to a boil. Once it comes to a boil let it sit without stiring for 4 minutes. Remove from heat and add baking soda and vanilla. Pour over popcorn. Mix well. Spread covered popcorn onto a large baking sheet (you may need to split it between two). Bake for 1 hour stiring every 15 minutes. Let cool completely. Eat!
