Sweet & Sour Chicken
Sorry this picture is a little on the blurry side. I made this recipe and took this picture before I purchased my new camera. Anyhow, I LOVE this recipe! It wasn’t too hard to make. I found this recipe on one of my favorite food blogs. So, if you get a chance you should add this to your menu! Sweet & Sour Chicken 3-4 boneless, skinless chicken breasts salt and pepper 1 cup cornstarch 2 eggs, beaten 1/4 cup canola oil Cut boneless chicken breasts into chunks. Season with salt and pepper. Dip chicken in cornstarch and then in egg. Fry in a little oil until brown but not cooked through. Place in a single layer in a baking dish. I chose this as my picture of the day because I wanted to share with everyone that this is the right way to eat a thin pancake (according to Jon…lol). First you spread a little butter on the thin pancake, then sprinkle with sugar. Yup, just straight sugar. You then stab your fork into a side of the thin pancake and then use the fork to roll up the pancake. You then remove your fork and EAT!! Why you may ask must they be eaten this way? Beats me! hahaha…BUT if I want to avoid a lecture on thin pancakes I just humor the hubby and follow his directions. Breakfast for dinner! Tonight I mixed up some batter and Jon cooked them. These lovely pancakes are NOT crepes as Jon will remind anyone who thinks they are…they are THIN PANCAKES (or Danish Pancakes). I’m not sure what the difference is between Danish Pancakes and crepes, but for some reason it offends the hubby so it will always be thin pancakes in our home. None of that really matters. Pizza Dough (Thin crust pizza…double for thick dough) 1/2 cup scalded milk 3 Tbsp. oil 1 Tbsp. sugar 1 pkg. yeast 3/4 tsp. salt 1/4 cup warm water Add sugar, salt, oil to scalded milk, cool.
