Chewy Chocolate Chip Cookies

Chewy Chocolate Chip Cookies

These are my husband, Jon’s, favorite cookies! He LOVES chocolate chip cookies. One night (midnight) we were watching Alton Brown’s, Good Eats, on the Food Network. His entire show was on chocolate chip cookies. He made thin, chewy and puffy chocolate chip cookies. What I loved was that all three recipes were based on the Nestle Toll House recipe. He showed that a few slight variations created three totally different cookies. Anyhow, Jon and I love chewy cookies so we tried it…probably the next day. When I made them for the first time we couldn’t stop eating them. I promise you these are DELICIOUS!! The only variation I’ve ever made is the type of chips. My favorite is semi-sweet, but you can use milk chocolate or whatever you...

My handsome husband…

My handsome husband…

I got home from work after 5pm and I couldn’t decide what my 2nd picture was going to be. I went thru my house snapping pictures of just about everything. I just wasn’t satisfied. I decided I wanted a picture of the place I am currently taking classes at to get my CDA (Child Developement Associate). Long story short…Jon didn’t want me to take our new camera to class because he worried about…who knows what…maybe that I would lose it or break it. I don’t blame him. Anyhow, because he wouldn’t let me take the camera I told him he would have to be my picture. So…here it is! He wasn’t too happy about having to take a picture thus the lack of a smile. I still think he looks pretty hot!! I love you Jonathan!...

Project 365-Day 1

Project 365-Day 1

Ok…so my little sister Rina challenged me to take the project 365 challenge. Which pretty much means I need to take a picture a day and blog about it. It doesn’t have to be long or extravagant just a picture and a post. So…I’m late in the game, as is Rina, but I’m very excited about this. They say it will help not only capture moments in your life, but also help you become a better photographer. Anyhow, I hope you enjoy this picture and all 300+ pictures to follow!     Ok…so I chose this specific picture because Coldstone was my Mom’s favorite ice cream shop. And her favorite flavor was coffee ice cream. Since it’s the anniversary of her passing Jon and I went (on this very cold evening in Logan) to Coldstone and...

Tribute to my Mom…

Tribute to my Mom…

Today marks the anniversary of my Mom’s death. So I wanted to dedicate this post to her. Mom, I LOVE YOU!! This is a picture I took of my Mom while she was undergoing treatment for her brain tumor in Maryland. The area her tumor was in caused her to have aphasia which defined is the inability to use or understand language (spoken or written). On this day she had an appointment to meet with her speech therapist to chart her progress. At the previous appointment she was given homework assignments to help with the aphasia. To anyone without aphasia they were very simple worksheets…a child could answer the questions. However, because of the aphasia she had such a hard time answering the questions. What made it worse was that she knew they were easy...

Sticky Coconut Chicken…YUM!!

Sticky Coconut Chicken…YUM!!

Ok…so I found this recipe a long time ago on one of my favorite food blogs. Anyhow, I finally had a chance to make it! It was so delicious. I was really nervous when I realized the chicken was supposed to be grilled. Somehow I totally missed that part. However, I pulled out the old George Forman grill and it turned out beautifully! So…please try this recipe! ‘Cause it’s good!   Sticky Coconut Chicken 6-8 boneless, skinless chicken thighs 1 cup canned coconut milk 1 Tbsp. minced fresh ginger 1 tsp. fresh ground pepper 1 tsp. red pepper flakes Marinade chicken in coconut milk, ginger, pepper and red pepper flakes at least one hour (I let mine marinade four about four to five hours). Grill on barbecue. Glaze: 3/4 cup rice vinegar 1/2...
