I got home from work after 5pm and I couldn’t decide what my 2nd picture was going to be. I went thru my house snapping pictures of just about everything. I just wasn’t satisfied. I decided I wanted a picture of the place I am currently taking classes at to get my CDA (Child Developement Associate). Long story short…Jon didn’t want me to take our new camera to class because he worried about…who knows what…maybe that I would lose it or break it. I don’t blame him. Anyhow, because he wouldn’t let me take the camera I told him he would have to be my picture. So…here it is! He wasn’t too happy about having to take a picture thus the lack of a smile. Ok…so my little sister Rina challenged me to take the project 365 challenge. Which pretty much means I need to take a picture a day and blog about it. Today marks the anniversary of my Mom’s death. So I wanted to dedicate this post to her. Mom, I LOVE YOU!! This is a picture I took of my Mom while she was undergoing treatment for her brain tumor in Maryland. The area her tumor was in caused her to have aphasia which defined is the inability to use or understand language (spoken or written). On this day she had an appointment to meet with her speech therapist to chart her progress. At the previous appointment she was given homework assignments to help with the aphasia. To anyone without aphasia they were very simple worksheets…a child could answer the questions. However, because of the aphasia she had such a hard time answering the questions. Ok…so I found this recipe a long time ago on one of my favorite food blogs. Anyhow, I finally had a chance to make it! It was so delicious. I was really nervous when I realized the chicken was supposed to be grilled. Somehow I totally missed that part. However, I pulled out the old George Forman grill and it turned out beautifully! So…please try this recipe! ‘Cause it’s good! Sticky Coconut Chicken 6-8 boneless, skinless chicken thighs 1 cup canned coconut milk 1 Tbsp. minced fresh ginger 1 tsp. fresh ground pepper 1 tsp. red pepper flakes Marinade chicken in coconut milk, ginger, pepper and red pepper flakes at least one hour (I let mine marinade four about four to five hours). Ok so really funny story! I was at my sisters house over the weekend. While there my nephews decided to do some kind of art work that required colored pictures they cut out of a book, bamboo skewers and elmers glue. When my nephew Noa asked his father for the glue his dad told him he would be responsible if they made a mess with the glue and that he’d be in big trouble regardless of who made the mess. Noa took the responsibility and went into the room with my other nephew Iuli and my neices Tui and Lia.
