Today, June 4th, is my Mom’s B-day. I miss her very much. She loved like no other I’ve ever known. I don’t know anyone (personally) that had as much faith as she did. She is and always will be my inspiration. I pray one day I will be  half the woman she was. I love you Mom! I miss you too much. Happy Birthday!

 

Another Craft…A Lovey

I’m sure you’re all sick of seeing the crafts I’m making, but that’s all I’ve done lately. I’ll post a recipe another time. Anyhow, this project was really easy. it’s small and just something for a baby to hold. Kim, my cousin-in-law, gave me the idea. She said it’s perfect for babies. All you do is get two pieces of fabric and different colored/textured ribbons and sew it up (ok…that’s very vague, but I’m too tired to think of how to explain it…sorry). So everyone go make one or twenty…heehee. Enjoy!

A little over a year ago I bought 9 mirrors from Ikea for only 1.99 each. I stained the frames and left them outside to dry. Well, I ended up going to girls camp and totally forgot my frames were outside. Generally, that’s not a problem in August here in Utah because we don’t usually get any rain. NOT the case last year. It rained on my frames and ruined them. The wood seperated at the corners making it unsalvagable. However, I refused to throw them away. I just stacked them up and put them in a corner. Yesterday I was bored and decided to do something with my frames. So I cut fabric out to wrap around each frame. I adhered it using a hot glue gun. They’re BEAUTIFUL!! Now I hope it doesn’t take another year to hang them. heehee. I’ll post a pic of them hung when I get that done…hopefully this weekend.

My school closed down for the rest of the week and will be opening up on Tuesday because half the school is sick. So, I got to stay home and twittle my thumbs all day. ACTUALLY, I got a lot done. I baked four loves of bread, went and hung out with Kim (Jon’s 1st cousin Andy’s wife…they just moved into the apartments) and Campbell, her baby. I had so much fun playing with Campbell that I went home and made a stuffed giraffe. I’ve never made one before, but I’d seen them around. I hope it lasts for at least a week. I don’t really know how to sew so don’t look too close. I even drew the pattern myself. That was pretty funny. I was just finishing it up when Jon got home. He asked where the pattern was so I showed him the cut out I had done on newspaper. LOL. What I’m trying to say is that I really had fun sewing and baking today. I can’t wait to make something tomorrow. I’ll keep you posted!

Chicken Cordon Bleu…oh so cheesy!

I don’t know about any of you, but I LOVE chicken cordon bleu. I’ve never made it myself until about a month ago. I didn’t have a recipe because I figure there’s not much to it…right? heehee. So, I made it up and I’m sure Jon was nervous, but he loves me so he ate it. AND he loved it! So here’s what I did. BTW, I’m not very specific. I really think every recipe has room for doing whatever you want with it. This will definitely be one of them. I’ll give you the ingredients, but I’m not going to say how much I used because I have no clue. Enjoy!

 

Chicken Cordon Bleu

Chicken Breasts

Deli Ham

Swiss Cheese

Italian Bread Crumbs

Parmesan Cheese

Egg

Salt & Pepper to taste

 

Pound the chicken breasts out (I did this by placing the chicken between plastic wrap and then used a mason jar to pound it). Season with salt and pepper. Then place a few slices of ham and swiss cheese toward the end. Roll it all up and use toothpicks to secure the ends. You want to try to get all the cheese and ham wrapped in the chicken. Then beat an egg or two (depending on how many pieces of chicken you’re making) in a dish that will allow you to coat your chicken. And in another dish add some bread crumbs and the parmesan cheese. Now, you’re going to dip the prepared chicken in the egg mixture. Then coat it with the bread crumb mixture. Then place it on a sheet pan. Bake it in 350 degree oven for 20-30 min or until chicken is cooked thru. I’m sure there’s a sauce you can make with it, but Jon doesn’t usually like the sauce. Have fun!
