Honey Sesame Chicken Goodness!!

Ok…so I don’t intend to post recipes that are from pre-made seasoning packets. However, this one was just too good not to share! It is super easy and super good! I’m not going to post the recipe because I threw it away. But I do have a pic of what you get and a pic of the exact package! I promise you it is delicious! I think it must be eaten with white sticky rice…but that’s just me. So, enjoy!

Sticky Coconut Chicken

 

Ok…so I found this recipe a long time ago on one of my favorite food blogs. Anyhow, I finally had a chance to make it! It was so delicious. I was really nervous when I realized the chicken was supposed to be grilled. Somehow I totally missed that part. However, I pulled out the old George Forman grill and it turned out beautifully! So…please try this recipe! ‘Cause it’s good!

 

Sticky Coconut Chicken

6-8 boneless, skinless chicken thighs
1 cup canned coconut milk
1 Tbsp. minced fresh ginger
1 tsp. fresh ground pepper
1 tsp. red pepper flakes

Marinade chicken in coconut milk, ginger, pepper and red pepper flakes at least one hour (I let mine marinade four about four to five hours). Grill on barbecue.

Glaze:
3/4 cup rice vinegar
1/2 cup sugar
3 Tbsp. soy sauce
1 tsp. red pepper flakes

While the chicken is grilling, bring above ingredients to a boil over medium-high heat and cook until mixture is reduced and thickened, about 8-10 minutes. Be patient because it takes a little while. But once it starts getting really thick, immediately take it off the heat! Glaze both sides of chicken the last few minutes of grilling and serve chicken over rice.
